I just updated to 3.8.2. Before (3.8.1), I probably changed something in the settings and had colored icons in the menu (I believe they were partly green/red). I tried to change the appearance but they didn’t reappear.
Am I dreaming, or was this really available in the previous version?

JabRef 3.8.1 was “Christmas edition”. This is why there was green and red icons.
Since it is not Christmas time anymore, these colors have been removed from JabRef.

We are currently working on making the color of icons (and their size) configurable: Make icon colors (and size?!) configurable by matthiasgeiger · Pull Request #2446 · JabRef/jabref · GitHub When this is integrated you can bring the christmas edition back for the whole year (or any other color scheme)!
