Whilst it is possible to change how much space of the window is given to the table of reference items vs the preview/entry editor, within the entry editor, I cannot change the height of the different fields.
For cases like annote or abstract, etc, it would, however, be helpful to customise the height of the fields with a simple boundary drag click…

Unfortunately, I think that implementing your suggestion is not trivial. What might help in your use case is to define additional tabs for the fields you usually fill with much content.
This can be accomplished by adding additional lines in the Options -> Set up global fields dialog:
