Is it possible to have a different set of columns and orders in the entry table for different libraries and/or groups?

This is currently not possible. However, there is an issue related to this Generic way to store preferences in .bib file · Issue #8701 · JabRef/jabref · GitHub which is about storing more preferences in the bib file itself.
You are welcome to comment on your ideas about storing the UI preferences there as well.

This would definitely be helpful. I will comment there as well. For now, I have done something completely insane. Which is created a separate preferences file for each bib file and then created a launcher for each that loads the respective bib file along with the corresponding preferences using the appropriate arguments. Thanks!
